Creekside Cookers tour the Mediterranean with Edgewater’s Peter Catsadimas

By Judi Tepe

EDGEWATER — “We love to eat” is the motto of Creekside Cookers of Edgewater. With over 100 members and growing, Cookers is one of the largest chartered clubs at Edgewater.

May’s guest presenter, Peter Catsadimas, returned to center stage Thursday, May 17 to delight his audience with mouth-watering, tried-and-true Greek recipes including Lo Kaniko (Greek sausage) and the traditional Greek side dish of rice and spinach simmered in a tomato base with just a hint of cinnamon.

In his well-equipped home kitchen, Peter prepared tastings for the entire Creekside Cookers membership. The food was then transported by the Cookers to the Lodge for serving. The Creekside Lodge was so fragrant with the smell of warming sausage, several other interest club members stopped by for a tasting. Peter is well known for “cooking big,” so extras are never a problem.

Peter’s family has been in the Chicago restaurant business for over 100 years. Peter managed the introduction and openings of the popular Ground Round restaurant chain. Early in his career, he managed the entire bakery supply of English muffins and hamburger buns for the McDonald’s corporation. His next move was to become the “seafood specialist” for the John Sexton Food Distribution Corporation.

Many snow birds will remember the Kapok Tree Restaurant in Clearwater, Florida. Peter and his staff managed a 1700-seat restaurant serving over 5,000 meals a day.

Peter is known around the Edgewater community as the go-to guy for any questions regarding cooking, eating, preparing, or dining. He is also available locally for cooking and speaking presentations.
