This week’s recipe is from a reader who prefers to be anonymous. It’s a great version of French onion soup. Very simple and very good, a little different than the standard version. Give it a try and let me know if you liked it.
Creamy French onion soup
Ingredients:
7 medium white onions, sliced into rings
3/4 cup butter
1/4 tsp. thyme
9 tbsp. flour
2 cans beef soup
8 beef bouillon cubes
8 cups of boiling water
Salt and pepper to taste
Directions:
Melt 1/4 cup of butter in saucepan. Add some of the onion rings and sauté until soft. Continue adding butter and onions until all are sautéed. Add thyme, flour, salt and pepper. Add soup and cubes and 1 cup water for each bouillon cube.
Bring to a boil; simmer 1/2 hour. Add additional water if soup is too thick.
Croutons: Cube stale French bread into 1/4 inch thickness. Toss with melted butter. Sprinkle Parmesan cheese. Bake at 325 degrees for 30 minutes. Top each bowl of soup with a few croutons.
