Cooking with the Geezers: Strawberry Pie

Before we get to this edition’s special recipes, I would like to again invite everyone who reads this column to consider sharing one of your family’s heirloom recipes. I’m sure there are some outstanding recipes used by our residents that have been handed down from generation to generation. That’s what this column is all about. Have you got one to share? Jean Williamson offers a pie that is sure to be a hit at your next gathering. But first, there’s a story behind how Jean’s recipe found its way to my column this week. Last month, while we were in Florida, Joyce and Larry Fik of Sun City invited us to dinner at their Bonita Springs home. They also invited another Huntley couple, Jean and Ron Williamson, whom we had never met. We were treated to a delightful dinner by the Fiks and got to know the Williamsons. During our conversation, my cooking column came up, and Jean said she had a recipe to contribute. Now, as Paul Harvey would say, for the rest of the story. Along with her recipe, Jean included the following information about herself and Ron.

“My husband Ron and I moved into Del Webb eight years ago. We also purchased a home in Ft. Myers [Fla.] at the same time and have been spending six months in each place since then. Our four children and eight grandkids all live near Huntley, so we spend lots of time with them when we are in Sun City.

This recipe is from my aunt, who is a wonderful cook. I make it a lot while in Florida, since the strawberries are so fresh and plentiful. Hope you enjoy it, too.”


Strawberry Pie

1 unbaked pie shell (9-inch)
3/4 cup sugar
2 tablespoons cornstarch
1 1/4 cups water
1 3-oz. pkg. of strawberry gelatin
4 cups sliced fresh strawberries

Bake pastry shell at 450 degrees for 13 minutes. Cool on a wire rack. In a saucepan, combine the sugar, cornstarch, and water. Stir until smooth. Bring to a boil, cook and stir for 2 minutes or until thickened. Remove from heat. Stir in gelatin until dissolved. Refrigerate for 15-20 minutes or until slightly cooled. Pour gelatin mixture over berries. Stir and pour into pie shell. Refrigerate until set. Top with Cool Whip, if desired.
